Trusting in our philosophy, and in accordance with the wines we want to produce, we are of course looking for an optimal grape quality.

Referring to carefully defined criteria, date of harvest is determined for every vineyard apart. In order to arrive at this goal, we consider taste of the berries to evaluate balance between skin, pulp and pips, as well as the analysis of sugar and acidity, performed in a modern wine laboratory.
The remaining three quarters of our vineyards are machine harvested. Our machine has been equipped with a destemmer, which immediately “cleans” the harvest in the vineyard and guarantees the picking of high quality grapes.
